Caramelised Banana French Toast

Ingredients for the caramelised fruits:

  • 2 bananas
  • 100g blueberries
  • 1 tbsp sugar
  • 1 tsp maple syrup
  • 50 ml water

Ingredients for pain au chocolat French toast:

  • 6 La Boulangère Selection Pains au Chocolat
  • 65g milk
  • 65g double cream
  • 1 egg, at room temperature
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon powder
  • 2 tsp sugar
  • Pinch of salt
  • 25g of butter
  • 20g of pecans

Method:

  1. Pre-heat the oven at 160 °C (fan);
  2. In a mixing bowl, whisk together the egg, milk, double cream, vanilla extract, cinnamon powder, 2 tsp sugar, and a pinch of salt;
  3. Pre-heat a large skillet over medium heat. Grease with butter. Dip each pain au chocolat into the beaten egg mixture and let it soak slightly. Then, flip and dip the other side;
  4. Place the pain au chocolat inside the skillet. Cook for a few minutes until golden brown. Then, flip and cook the other side. Usually, it takes about 2 minutes per side. Repeat with the remaining pain au chocolat;
  5. Pop the pains au chocolat in the oven to keep them warm;
  6. Cut the bananas in three parts crosswise, and slice some of the blueberries in half;
  7. Place a pan over medium heat, add the banana slices, sprinkle over 1 tbsp of sugar, then pour the maple syrup and water on top of the bananas. Let the sauce and bananas bubble away gently for a few minutes;
  8. Then carefully turn over the bananas with a spatula to cook on the other side until they are nice, soft and golden. Pour in all of the blueberries and continue to cook until the pink juice is visible;
  9. Serve the banana and blueberry sauce on top of the pain au chocolat and garnish each of them with some pecans.
